how to use 1/8 in plywood to panel a kitchen island?

i am redoing a kitchen island i got in a sale. it was beautiful...until someone painted it black. instead of stripping it and sanding it, i was thinking of paneling it instead. i was thinking of using 1/8 (or thinner) plywood to cover the two sides and back and staining it. i will be making new doors. any thoughts? better ideas?
